With over a decade of experience in luxury hospitality, Florent Chauveau brings his deep expertise in guest excellence and operational precision to his role as Hotel Director at Château la Commaraine Hotel, Spa & Cuverie.

Prior to joining the Château, Florent held several leadership roles at the Royal Champagne Hotel & Spa in Champagne. From 2021 to 2023, he served as Director of Guest Relations, ensuring a highly personalised and refined guest experience. Between 2018 and 2021, he was Food & Beverage Manager, leading the teams with a strong attention to detail and a deep respect for the region’s terroir and seasonal ingredients.

From 2015 to 2018, Florent held the position of Banqueting Director at the Four Seasons Hotels & Resorts in London, where he oversaw prestigious events and private functions for an international clientele.

Located in the heart of Pommard, in Burgundy’s celebrated Côte de Beaune, Château la Commaraine is a historic estate whose roots date back to the 12th century.

Over the centuries, the estate passed through the hands of prominent Burgundian families, becoming a symbol of excellence and heritage. Its 8.96-acres vineyard, surrounded by traditional stone walls, has long held Premier Cru monopole status—an exceptional distinction in Burgundy that speaks to the quality and singularity of its terroir.

The château itself, is an elegant residence nestled at the heart of the vineyard. It reflects both the architectural charm and cultural refinement of the region, with every corner steeped in centuries of viticultural history.

In 2017, the estate entered a bold new chapter when it was acquired by passionate owners committed to restoring its former glory while imagining its future. With care and vision, Château la Commaraine is being transformed into a unique destination, blending the soul of a wine estate with the sophistication of a luxury boutique hotel, spa, and cuverie.

• A legacy dating back to 1214
The name La Commaraine was first recorded in 1214, making it one of the oldest vineyard sites in Burgundy still in use today. Over 800 years of winemaking history rooted in the very same soil.

• Pommard produces only red wines
Unlike many villages in Burgundy that produce both red and white wines, Pommard is exclusively dedicated to Pinot Noir. Its powerful, structured reds have long been admired even by Napoleon I, who was known to favour them.

• A terroir so precise, it changes in meters
In the Côte de Beaune, the concept of terroir is so refined that the classification of a vineyard can change over just a few meters, depending on the slope, exposure, or composition of the soil. This extraordinary precision is what makes Burgundy so unique and so revered.

Each of our rooms and suites offers an elegant and immersive experience, blending comfort, design, and the spirit of Burgundy. These spacious suites (506–678 sq ft) feature two distinct living areas, including a separate lounge with a sofa bed. Available on all floors, they offer courtyard views and include both a bathtub and a walk-in shower for added comfort.

The Commaraine Suite (560 sqft) features courtyard and vineyard views, a balcony, and a living room with sofa bed. Connecting room available.

A unique 237 sqft room on the second floor, offering uninterrupted vineyard views and a walk-in shower.

• Premier Cru Room
Bright and spacious, these rooms (334–431 sqft) feature courtyard views. Each includes a walk-in shower and a refined atmosphere.

•Premier Cru Room – Vineyard View
Ranging from 312 to 377 sq ft, these rooms offer sweeping vineyard views. Designed for relaxation, each includes a walk-in shower and benefits from generous natural light.

• Villa des Vignes
A private 2,271 sq ft villa accommodating up to 8 guests. Spread across two floors, it features a 388 sq ft shared living space—including a lounge, dining area, and a kitchenette—alongside one Bourgogne Room (258 sq ft), two Grand Cru Junior Suites (506 & 549 sq ft), and one Monopole Suite (570 sq ft). Overlooking the vineyards of La Commaraine, this refined retreat is ideal for families or groups seeking privacy, comfort, and timeless elegance.

Restaurants & Bars

• Le Clos is our restaurant and bar, offering elegant French cuisine crafted by Chef Christophe Raoux, Meilleur Ouvrier de France 2015. His menus highlight the best of Burgundy’s seasonal ingredients, prepared with finesse and authenticity. The restaurant opens onto our on-site winery, offering a unique setting where guests can enjoy their meal with views of the working cuverie a true connection between the kitchen and the vineyard.

• Le VIII is the Château’s signature gastronomic restaurant by Chef Christophe Raoux, set beneath magnificent vaulted ceilings that evoke the estate’s rich history. The space offers an intimate, refined atmosphere where guests can savour a cuisine that is both elegant and deeply rooted in Burgundy’s traditions.
