Château Sainte Sabine
History & Story
Stronghold at the end of the 16th century and property of 4 aristocratic families or merchants until the 19th century which modified Château Sainte Sabine and gave it its appearance of today and its style neo-Louis XIII and neo-Louis XIV. It was bought by Jean-Louis Bottigliero, former general manager of Relais & Châteaux in 2012. Séverine Pétilaire-Bellet, former CEO of the Airelles group, bought it with the Hostellerie de Levernois in 2021 and began a major renovation program. Château Sainte Sabine joins the great Relais & Châteaux family in 2024.

Fun Facts
• In 1966, the castle became a girl boarding school, administered by Monsieur Bourgeois, natural son of Mistinguett and Maurice Chevalier.
• Monsieur Gilinski modified the castle by adding a large terrace on the north side in 1990 and, in doing so, he found the castle’s ancient archives in a walled cupboard.

At the heart of the Château, lies the gastronomic restaurant Lassey, with its botanical-patterned fabrics framing the panoramic views of the park, and its young Chef Alexandre Ziane. He will create harmonious, honest and generous cuisine for you, revealing all the delicious flavours and character of each season. Keen on simplicity and the pursuit of pure flavour, Chef Alexandre Ziane plays with products from the Burgundy terroir, enhanced with aromatic herbs.
