Séverine Pétilaire-Bellet was Axel’s sponsor while he was studying at IAE Savoie Mont-Blanc. During his first year, Axel asked Mademoiselle to entrust him with a project. One project led to another, and finally Séverine Pétilaire-Bellet offered Axel – aged just 24 – the position of Director General at Hostellerie de Levernois and Château Sainte Sabine.

Nestled in a lush greenery in the heart of the vineyard of Burgundy, Hostellerie de Levernois – Relais & Châteaux, a 5-Star Hotel in Burgundy, offers peace and serenity only 5 minutes away from the historical center of Beaune and the A6 highway.
This little paradise of Burgundy welcomes you in a warm atmosphere where the art of living and well-being set the tone. Soak up the atmosphere of this 18th century mansion. Burgundy slabs, exposed beams, tiles and noble materials mingle with the character and charm of the house.
Two restaurants await the gourmet’s palate. Indulge yourself at the Michelin-starred Table de Levernois, where our Chef Philippe Augé offers a culinary experience of traditional Burgundian flavors, each dish a passionate ode to the seasons and the region.At Bistrot du Bord de l’Eau, we present a daily reinvention of fresh and gourmet cuisine, curated from market produce and vegetables cultivated in our own garden.

Perched on nearly 15 acres of vineyards, French gardens, and centuries-old trees, the hotel effortlessly blends old and new with 39 rooms, suites and villas spread out across three buildings, a Michelin-starred restaurant helmed by Chef Philippe Augé, and a stone cellar boasting more than 1,000 bottles of the region’s most renowned wines. There are also tennis court, an adjoining golf course, and an organic vegetable garden.

Fun Facts
The huge fireplace inside the Bistrot is the real fireplace the family who used to live here used for cooking all their meals !
In the rooms, we have old tiles where you can spot pawns of dogs and cats as in the 17th people used to let tiles dry under the sun where cats and dogs could leave their prints forever.
Children’s Corner

PAVILION Room
Room of approximately 35 square meters, located on the ground floor (wheelchair accessible) in the Pavilion (100m away from the Main House), and furnished with a double bed (200×200) or twin beds, bathroom with a shower and bathtub (or shower only). Each room has its own private outdoor terrace. A convertible sofa bed is available upon request, subject to an additional fee.
SUITE

ROOFTOP VILLA
Imagine a village of 7 villas perched on the roof of one of the buildings of l’Hostellerie de Levernois.
These new exceptional villas, made with wood, of 125sqm including a private patio of 35sqm, offer a spectacular panoramic view on the 7 hectares park and its hundred-year-old trees.
The master bedroom, bathed in light through a large bay window, is furnished with a king-size bed, fireplace and lounge area. The second sleeping area, located on the mezzanine, kind of perched, has two twin beds or a king size bed.
The kitchen and the bathroom with a double shower and hammam complete the layout of this intimate accommodation in the heart of the estate.
